This is a recipe from Jamerrill's Large Family Table, modified to suit my family's tastes. Also, it was intended as a bulk freezer cooking recipe, but I only had time to make enough for one meal. So here's my version of the recipe:
Ingredients
- Two Bags of English Muffins (6 in each bag)
- Shredded cheese
- Pizza Sauce
- Salami, sliced into strips
- Shaved Ham
- Barbeque Sauce
Instructions
- Cut all English muffins in half
- Layout English muffins and top each half with the desired amount of Pizza Sauce
- Sprinkle shredded cheese on each English Muffin
- Top with salami and ham
- Squirt with BBQ sauce - this was my daughter's idea and it made them taste a bit strong when combined with the pizza sauce. I would recommend skipping the BBQ sauce if you don't like strong flavours.
- To eat immediately bake on 200 for 15 minutes
Vegan Option
Because we have a friend who is vegan staying with us at the moment, we also made a vegan option:
Ingredients
- One Bag of English Muffins
- Tomato Sauce
- Meat-free sausages, cooked and thinly sliced
- Gherkins, thinly sliced
- Barbeque Sauce
Instructions
- Cut all English muffins in half
- Layout English muffins and top each half with the desired amount of Tomato Sauce
- Top with meat-free sausages and gherkins
- Squirt with BBQ sauce - this was my daughter's idea and it made them taste a bit strong when combined with the tomato sauce. I would recommend skipping the BBQ sauce if you don't like strong flavours.
- To eat immediately bake on 200 for 15 minutes
This would also make a good lunch recipe.
